With the arrival of a new month, a new super food becomes the focus in our Associate Dining Rooms. Super foods are generally whole, natural foods that contain various vitamins, minerals or antioxidants. This month, we are showcasing SPINACH! Our fifth super food this year! One cup of spinach contains over 337% of the RDA of vitamin A, a great boost to our immune systems. The vitamin C, vitamin E, beta-carotene, manganese, zinc and selenium that is present in spinach all serve as powerful antioxidants that combat the onset of osteoporosis, atherosclerosis and high blood pressure.
Spinach is an easy food to incorporate into casseroles, side dishes, or even as a substitute for lettuce on a sandwich or burger. A few of the spinach dishes featured in our Associate Dining Rooms this month are Chicken and Spinach Casserole, Spinach and Tomato Soup with Rice, and Collard Greens and Spinach. We expect all three dishes to be popular with our associates and they will receive recipe cards for each dish so they can make them at home. We’ve included the recipe for Spinach and Tomato Soup with Rice. We can’t wait to give it a try!
